PASSIONATE	Passion can work for or against a Chef. I am very passionate about food but if someone complains it hurts and can stop you in your tracks – what have I done wrong? That’s passion!
LOVE	If you don’t love doing it there is no point getting out of bed. Money is irrelevant.
ARTISTIC	I am no decorator but I can dress a plate to create a picture
COLOUR	I look at things somewhat differently. Colour combinations should be right. Not Brown, Brown, Brown on the plate
MOTHER	Every son loves their Mother and I am no exception. But if she could have cooked when I was a child I would not be where I am today. Apparently she can cook very well now. I wait to see!
I am self-taught but I have had a lot of lucky breaks in my life and worked for great chefs over 25 years. I have trained plenty og chefs and am still doing it to this day and LOVING IT! Watch this space. That’s me!

I won’t even try to compete with my husband’s quirky was of doing things. Suffice to say that he is the master of the kitchen and I rule the front of house (not with a rod of iron but from the front) In terms of the catering industry I am a newcomer with 20 years service.

Most definitely a late developer (that was on my very early school reports I recall) and not finding my true vocation till I was in my 30’s. I have always had a love of good food and wine which came from my parents.

Unlike Darron, my Mother was an excellent cook and my Father has always been fond of the odd glass of good wine.

I started in the wash us at The King’s Head, Ivinghoe as I just wanted a stress free job after giving up landscaping (Everyone will tell you that I am still a bit of an old Hippy!), but I was dragged kicking and screaming out of the kitchen into the front of house.

I owe where I am today to Mr Georges, the owner of that establishment who was a stickler of silver service and presentation. Some of that stays with me to this day although my style is more relaxed. He instilled in me the passion for service which I still have and will for many more years
